Drink Description:  The State Street Sour is an homage to the classic New York Sour, a traditional whiskey sour with a red wine float. This modern spin incorporates a delicious fusion of semi-sweet flavors reminiscent of the caramel candy apples of our youth.

Recipe Instructions:  Sangria: In a one liter jar, add one bottle Kunin Pape Star, one sliced apple, one sliced blood orange, four sliced strawberries, two lime wheels, two lemon wheels, and 2 oz. of Giffard Vanilla de Madagascar liqueur. Refrigerate for 24 hours. (All fruits locally sourced)

Cocktail: Add the following into a mixing glass
2 oz. Bourbon
.5 oz. Apple Pie liqueur
.25 oz. Licor 43
.25 oz. Caramel syrup
.25 oz. Yuzu extract
.75 oz. Lemon juice
1 bar spoon egg whites

Shake for ten seconds and strain mix back into mixing glass. Dump ice. Add an additional bar spoon of egg whites and shake again without ice. (This technique, referred to as the reverse dry shake, allows for increased emulsification of the egg whites producing a creamier, frothier head). Pour all ingredients into a double rocks glass with ice. Add sangria float and garnish.


Tasting Notes:  A whiskey sour is a simple combination of bourbon, lemon juice, simple syrup and egg whites. The oldest historical mention of the drink dates back to 1870. The State Street Sour transports this true classic to the modern American Riviera.

Cutler's Apple Pie liqueur, touting flavors of fresh apple pie and the tangy trio of cinnamon, vanilla and spice, combine beautifully with Spain's Licor 43, a delightful spirit consisting of 43 proprietary herbs and spices: notably vanilla, accompanied by sweet fruit and a light touch of citrus. Adding a modicum of caramel syrup, this unique combo makes for delectable bed fellows.

The Japanese Yuzu fruit is an aromatic citrus which delivers a cross between a grapefruit and a lime. Combined with the subtle sweetness of local Meyer lemons, this pairing to the sour portion of the concoction adds another distinctive element.

Our house-made sangria as opposed to a simple red wine float is the topper, pun intended. Well- known local wine Kunin Pape Star (a blend of Grenache, Mourvedre and Syrah) features cocoa and cherry on the nose, concentrated dark fruit on the palate, light tanins and a medium finish, and its use is an homage to beloved winemaker, Seth Kunin. The fresh fruit and spirit additions conspire to create a candy-like liquid with hints of fruit and citrus. The float is the final complement to this elevated, enticing elixir.

The Backstory:  The popularity of bourbon and rye whiskey, and cocktails, particularly the classics featuring those spirits, has exploded in the last decade. While considering a new cocktail for this competition it seems like a logical place to start.
New York and Santa Barbara are bartender Scott Sampila’s favorite places on the planet. Having lived in both, he was compelled to create something that tied the two together.

How does your drink embody the spirit of SB?:  The State Street Sour is comprised of SB spirits, local wine, and primarily local ingredients. Cheers!

Ingredients:  Local Strawberry and Pink Peppercorn infused Cutler’s Gin, Lillet Rose, Salers Apertif, House made Lemon Bitters

Drink Description:  La Huerta
Cutler’s Gin, Strawberry, Pink Peppercorn, Lillet Rose, Salers Apertif, House-made Lemon Bitters

Recipe Instructions:  In a mixing glass add 2 dashes house made lemon bitters, .75oz Salers Apertif, 1oz Lillet Rose, and 1.5oz infused gin. Add cracked ice to the mixing glass and stir until chilled. Strain into a chilled coupe and express a lemon twist above the surface and discard. Garnish with a pink peppercorn leaf.

Tasting Notes:  This cocktail is a wonderful aperitif. It would be a great drink for a warm summer evening just before a meal. Pair this cocktail with cheese, cured meats, herb salads, and oysters. When the cocktail is sipped the sweetness of the strawberry and bright herbaceous notes of the peppercorn dance harmoniously with the citrus forward botanicals of Cutler’s Artisan Gin to create a foundation for the rounded flavors of rose petals and ripe berries of Lillet Rose. The Salers Apertif adds a clean mineral finish while a few dashes of lemon bitters brightens the remainder of the sip to a refreshing close.

The Backstory:  This cocktail is named after La Huerta Historical Botanical Garden at the Santa Barbara Mission. This living museum offers an authentic collection of
plants that have been found around the mission since the late 18th century. Huerta is Spanish for an orchard and garden established within the walls of the mission that would host vegetables and fruits necessary to support its residents. The success of these huertas would prime California’s successful future in agriculture.The goal of this cocktail was embody Santa Barbara’s flourishing success in agriculture while fitting within the constructs of The Lark’s bar program.

How does your drink embody the spirit of SB?:  Strawberries have continued to be the county’s number one crop and pink peppercorn trees are iconic to the area and can be found around every corner. Both of these plants define the central coast, especially Santa Barbara. And when tracing back the roots of our agricultural bounty, it all leads to the huerta found within the Mission where some of the cities earliest crops were tended. In an effort to showcase Santa Barbara's successful agricultural identity, strawberries and pink peppercorn reflect what we have to offer, and the huerta is where it all began.


At The Lark, we strive to create progressive and contemporary cocktails inspired by seasonal produce. But within those constructs, when building a cocktail that embodies the city of Santa Barbara, we also take into account drinking as a culture, specifically how a drink will reflect Santa Barbara’s culture. While identifying this this, we decided that a spirit forward aperitif really fits the attitude and feel of Santa Barbara. This cocktail is meant to be sipped on a warm Santa Barbara evening with some cheese, hors d’oeuvres, and good people.

Drink Description:  The Mission Statement cocktail embodies the true spirit of Santa Barbara with a long list of local ingredients and a laid-back attitude. It's a cocktail - with wine!

Recipe Instructions:  Chop lemon, lime, orange, grapefruit and cucumber into medium-sized pieces and freeze solid ahead of time. Combine all of the ingredients into a mixing tin. Add equal parts of the frozen fruit (in place of ice). Medium shake until very well chilled. Pour all ingredients into a festive glass. Garnish and enjoy.

Tasting Notes:  This cocktail has a lot of players, but each of them is contributing something necessary and special - just like a good party. The Mission Statement is great sipped alone, with a good BBQ or some savory snacks. You will first taste the wine, then the citrus, followed by the spirits. The citrus and amaretto linger on your nose, while the Cutler's Apple Pie Liqueur and Stolpman Syrah linger on your tongue.

The Backstory:  We were looking to contribute a recipe that truly embraces the spirit and attitude of this great little beach town. With some research, we discovered that the Missionaries used to enjoy drinking sangria. This discovery provided us with great inspiration and the springboard for our Mission Statement cocktail.

How does your drink embody the spirit of SB?:  We think this cocktail embodies the local spirit of Santa Barbara to its fullest degree. With amazing local wines, spirits and produce available to us 365 days a year, the Mission Statement was born. This drink is complex, yet friendly. It is approachable and sweet, but it also packs a punch. It has history, but is made new with the help of our local artisans and farmers. We love that you can come into The Imperial and enjoy a Mission Statement cocktail, then be inspired to try your own version at home with friends. It is about time and place and community.

Recipe Instructions:  Shake all ingredients with ice and strain into a chilled martini or coup glass. Garnish with 3-4 Pink Peppercorns.

Tasting Notes:  Botanical in nature with floral hints of citrus, peppercorn spice and wild blossoms.

The Backstory:  The Franceschi is named after internationally respected horticulturist and Santa Barbara resident, Francesco Franceschi. Without his indelible fingerprint on the landscape itself, Santa Barbara would look very different today. For instance, Franceschi raised from seed many of the trees that were planted in 1908 to line the famous tunnel of Italian stone pines (Pinus pinea) that still shades Anapamu Street.

Francheschi is credited for introducing an astonishing number of plants to our picturesque city over the two decades he lived here. We became inspired by the cornucopia of plants accredited to Francheschi and named the drink in honor of him and his life's work.

How does your drink embody the spirit of SB?:  The Franceschi celebrates Santa Barbara’s inimitable natural beauty. Complex botanicals of Santa Barbara’s Cutler’s Gin, pink peppercorn and rich nuttiness of Frangelico from Franceschi's native Italy mixed with the exotic flavors of African Caperitif (where he spent his later years) combine in a cocktail any globetrotting guest of Santa Barbara will appreciate.

Drink Description:  Riviera Hermosa translates to “Beautiful Riviera,” and is a tribute to our beautiful American Riviera. Cutler’s 33 Straight Bourbon Whiskey, Housemade Sage and Thyme-infused blood orange syrup, fresh squeezed lemon, aromatic bitters and a float of Sanford Flor de Campo Pinot Noir.

Recipe Instructions:  For the cocktail: Mix Cutler’s 33 Straight Bourbon Whiskey with the Sage and Thyme-infused Blood Orange syrup and fresh squeezed lemon juice. Add two dashes of Fee Brothers Old Fashioned Aromatic Bitters. Shake, strain, and pour the drink over ice into a sugar’d pilsner glass. Add a float of Sanford Flor de Campo Pinot Noir and garnish with fresh thyme and a dried blood orange.
For the glass: Rim half of a pilsner glass and dip in the activated charcoal, sugar, and cayenne mixture.

Tasting Notes:  Our take on a bourbon sour, that celebrates the sharp sour notes of fresh blood oranges, with hints of fennel & lemon peel (from Pinot noir float). Perfect to enjoy with citrus forward summer dishes, ceviche, dark green greens like arugula, and beet salad.

The Backstory:  After the recent disasters to hit the American Riviera, our community came together in the most beautiful way to support one another in the midst of chaos. Today, Santa Barbara stands stronger together than before, and we are reminded of its beauty on a daily basis.

How does your drink embody the spirit of SB?:  The striking combination of colors and textures of this drink evoke our natural surroundings in Santa Barbara - from the sunset skies, to the mountains, to the bounty of the land we live on. The Riviera Hermosa is an homage to our beautiful American Riviera, celebrating it on every level. From the strength and resilience of our community to the natural beauty that surrounds us all, we are lucky to call the Riviera Hermosa home.

Recipe Instructions:  Combine all ingredients into shaker.
Add ice, shake 15 seconds.
Double strain into coupe glass (chilled).
Torch rosemary to express aroma and finish with freshly cut lavender sprig.

Tasting Notes:  Bright Violet & Rosemary culminates with orange flower water to unite everything together. This is a crisp, refreshing & lively beverage that has a great perfume and citrus essence. Most of these ingredients may be found in Los Padres National Forest.

The Backstory:  "When creating this cocktail, the Thomas Fire was my inspiration. Every flavor in this cocktail is native and very common in the area (juniper, lemon, blueberry, sage, lavender). This cocktail represents the unity formed in the community in the wake of fire. All of the ingredients come together to create a bright, floral and well connected infusion of what Santa Barbara has to offer."

How does your drink embody the spirit of SB?:  Santa Barbara continues to be impacted by the Thomas Fire and resulting mudslides. This cocktail represents the unity that this community has formed, due to the fire. Just like the orange flower water brings all the flavors together in balance, so does the community of Santa Barbara bring one another together in times of need. Every ingredient sourced in this cocktail was affected by the fire and most can be found in Los Padres National Forest. This cocktail shows the prevailing spirit of Santa Barbara and how we have survived and are flourishing despite the challenges. The Ritz-Carlton Bacara, Santa Barbara was honored to be a home away from home for over 150 families in time of need. To that end, we will donate 10% of the drink revenues to The Bucket Brigade to aide with continued recovery in the area.

Drink Description:  Lane's Libation is a sweet n' toasty martini that's roots came from the Walnut trees. Combining raw ingredients with cultured spirits captures a picture perfect cocktail worth trying.

Recipe Instructions:  Make Sugar Crisp by placing sugar on an orange wheel, 2 drops of Fee Brothers Black Walnut Bitters on the sugar then torching. Let sugar caramelize and place walnut in center of liquid sugar. Refrigerate the whole thing until hard.

Combine Cutler's 33 Bourbon Whiskey, fresh Santa Barbara lemon juice, honey syrup, Fee Brothers Black Walnut Bitters, Cointreau and Graham's Tawney Port 10 Year in a shaker with ice. Strain contents into separate shaker, and add egg white. Shake again. Pour and strain into coup glass, garnish with few drops of Fee Brothers Black Walnut Bitters on egg white fluff, and balance sugar crisp on the glass.

Tasting Notes:  Lane's Libations begins with a sweet caramel first touch. Its a medium bodied that has tones of smoked bark, citrus, pine and a bitter nutty finish The egg white gives it depths and a creamy texture like eating a walnut.
Lane's Libation pairs well with a baby kale berry salad, or could be a stand alone dessert drink.

The Backstory:  Lane Farms was established in 1939 with a total of 180 acres. Miles Lane, originally from Missouri, came to California and founded the farm. To make his walnut crop, he invented a walnut huller to make production to be more affective
I grew up in Goleta, and frequently visited Lane Farms on Walnut Avenue during the fall. Presently popular for their pumpkin patch and corn maze during Halloween, the farm's popularity grew because of its fresh available produce. Besides citrus avocados and berries, Santa Barbara is capable of producing a wide variety of crops, including nuts. Even the smallest crop can make a difference and Lane Farms, now only 3 acres, makes that difference by giving back to the community with entertainment for little kids during the holidays, and providing locals with the fresh fruits and veggies for everyone to enjoy!

How does your drink embody the spirit of SB?:  Lane's Libation embodies the spirit of Santa Barbara by reminding us about our agricultural history and future.

Recipe Instructions:  Add Rye ,ginger liquor lime juice, and fernet to shaker. Add ice shake vigorously. Pour over tulip or high ball glass half filled with ice. Too with ginger beer and lime garnish. Enjoy anytime anywhere.

Tasting Notes:  Great rye balance with the herbal and citrus notes to refresh. The ginger provides the bite to keep you coming back for more.

How does your drink embody the spirit of SB?:  It is a perfect mix of the Rye blue collar feel so many here embodies. Also embraces the fernet sub culture that the larger bar slinging crowd enjoys. The citrus brings in the tropical bite we all love as we stroll down the beach.

Drink Description:  Our Santa Barbara Sour's use of gin's botanicals and the herbaceousness of parsley bring a silky mouth-feel with a little spice that’s perfectly invigorating.

Tasting Notes:  This drink is refreshing and well balanced with a hint of fresh botanicals delivered by the gin.

The Backstory:  I created this cocktail on a sunny day at the beach in Santa Barbara.

Tasting Notes:  Bright and herbaceous with an earthy backbone and slightly floral aroma.

The Backstory:  Santa Barbara is naturally beautiful at a glance, but it is much more complex than it's facade allows. I wanted to make something that reflects the easy, bright style and appeal of our town, but also represents the actual depth and heartiness of the community itself. My inspiration came from Lotusland, which is one of my favorite destinations in Santa Barbara. Ganna Walska's aloe garden is iconic, and her favorite music was the waltz, so there you have it.

How does your drink embody the spirit of SB?:  This cocktail contains a lot of surprising ingredients that at first glance may seem uniquely paired, but once working together, they flourish with vivacity and balance, just like the community that makes up our beloved Santa Barbara.

Tasting Notes:  Bright and elegantly balanced, The Drive Home is cleansing on the palate. Sweet and tart with an herbaceous finish, it pairs well with a warm summer afternoon and persists all the way through a quintessential Santa Barbara sunset. The lemon ash offers texture and smoke, while the foam allows silky coconut to poke its head around the corner and say hello.

The Backstory:  The Drive Home recreates the sensory experience of returning to Santa Barbara on the 101 from the South, those first moments where we start to feel back at home. Our shoulders drop down as we breath in that unmistakable Santa Barbara air. Citrus wafts into the car as we zip past the lemon orchards, all the while a crisp salinity in the air from the ocean to the left. We come around the curve into Montecito and run smack into a wall of Jasmine. No combination of smell feels more representative of our remarkable town than the culmination of these three.

How does your drink embody the spirit of SB?:  Our intention with this cocktail is to highlight the sensations we are all fortunate enough to experience living in this unique little corner of the world. Some days we take them for granted, other days we're floored by the purity and beauty of our surroundings. To us, the precise moment that we again feel the comforts of home is a pure representation of the joy this town brings our lives.

Recipe Instructions:  METHOD

1. Combine all ingredients in a cocktail shaker
2. Shake vigorously
3. Pour over ice into a stemless wine glass

Tasting Notes:  This smooth and refreshing handcrafted cocktail, Biltmore Fuerte, features Cutler's 33 Bourbon that holds notes of sweet honeycomb, caramel, vanilla, and spice. The notes of honeycomb are mirrored by the local "Super Bee Rescue" Thomas Wildfire honey that enhances the beverage with subtle rich smokey flavors. Local Ebby's Farm strawberries create a crisp and tart contrast that makes for a perfect balanced cocktail.

The Backstory:  After months of Four Seasons Resort The Biltmore Santa Barbara being closed due to the Thomas Fire and Montecito Debris Flow, Ty Lounge Bartender, Samantha Graham, welcomed this year's Visit Santa Barbara cocktail challenge with eager arms. Being originally from South Africa, Samantha quickly fell in love with the close knit community feeling Santa Barbara had to offer. She was deeply moved by the loss our community faced in the wake of not one, but two, natural disasters. When thinking about cocktails and ingredients that truly embodied the spirit of Santa Barbara, Samantha remembered news coverage about a man who owned a bee removal and rescue company. He and other bee keepers lost thousands of hives in the Thomas Fire. Samantha reached out to him and discovered that in addition to saving the honey, he also rescued many bees looking for a new home. The honey he extracted from the hives in the Thomas Fire had a new and unique flavor with notes of sweet smoke. Samantha knew she had to use this new Thomas Wildfire honey as the key element of her drink.

How does your drink embody the spirit of SB?:  Just as Nick Wigle with Super Bee Rescue was able to find something good in the wake of tragedy, Four Seasons Resort The Biltmore Santa Barbara and our beloved community have come together to support and help one another even though we have been faced with unimaginable odds. Santa Barbara is truly resilient and has never been stronger as a community. Like the "Super Bee Rescue" honey, we too, have found that out of hardship comes great things.

The Backstory:  In 1913, the El Encanto land was bought by Riviera Company.
The majority stockholder was banker George Batchelder, who came to be known as the “Father of the Riviera.”
He named the development site “The Riviera” because it reminded him of the French coast overlooking the Mediterranean.
The Riviera Company planted hundreds of oak seedlings, and ahead of his time, Batchelder put wires and cables underground and insisted that homes be laid out so as not to block neighbors’ views.

How does your drink embody the spirit of SB?:  The cocktail embodies the spirit of Santa Barbara through the local and house made techniques that Santa Barbara is so fond upon. It uses everything Santa Barbara has to offer, from the local lemons grown in our land to the water used for the bourbon distilled here in Santa Barbara.

Drink Description:  The State Street Sunset will put you into the right frame of mind to relax and enjoy good friends, good conversation and great food while sitting on our State Street patio watching the unbelievable Santa Barbara American Riviera sunset. We use a unique combination including Patron tequila, several fruit juices and Cutler's Apple Pie liquor. Our mixologist, Noelle Jeanette really got this right.

Recipe Instructions:  ** Build and Layer on the Rocks **
- Combine Chamboard and Apple Pie Liquor in bottom of EMPTY rocks glass
- Fill glass with ice
- Shake OJ and Lime juice and strain over ice
- Using the back of a spoon, layer Arianciata
- Repeat with Tequila and Orange Liquor
** Garnish with salt (optional), sprig of mint and a blood orange slice

Tasting Notes:  This drink will keep you warm even after the sun sets. The Patron tequila is unbelievably smooth and flavorful with the combination of other refreshing ingredients which includes a surprise hint of Cutler's Apple Pie liquor.

The Backstory:  We could not think of anything more awe inspiring to create a signature drink for than one of Santa Barbara's magnificent orange and red sunsets. We believe our sunset is best observed from our State Street patio while also watching the world walk by. When you taste The State Street Sunset for the first time you will say exactly what you say when you see a red sunset for the first time, Oh Wow...

How does your drink embody the spirit of SB?:  We chose to keep our drink simple and uncomplicated but fun, just like we prefer our Santa Barbara lifestyle. We chose to create a drink that is strong in character, one with ingredients that have survived the test of time and one that once tried will linger in your memory, just like watching a Santa Barbara sunset. No fire, flood or mudslide can keep us depressed for long when we have our sunsets to watch and our State Street Sunsets to drink.

Drink Description:  A play on the classic Vieux Carre, or Old Square, that was invented in the late 1930's in the heart of the French Quarter. We created the Moreton's Giving Tree to honor the memory of the booming Hollywood history of Santa Barbara that was just coming to a close around the same time.

Recipe Instructions:  Mix all in a Japanese mixing glass and strain over ice.

Tasting Notes:  The Moreton’s Giving Tree is a slow-sipper, with its aromas of clove, vanilla, and anise, combined with its subtle notes of candies spices and citrus.

The Backstory:  The name for the cocktail comes for a long-storied history of the Moreton Bay Fig Tree that is located near the train station here in Santa Barbara.

How does your drink embody the spirit of SB?:  A seaman visiting Santa Barbara in 1876 presented a seedling of an Australian Moreton Bay Fig tree to a local girl who planted it at 201 State Street. After the girl moved away a year later, her girlfriend, Adeline Crabb, transplanted the tree to the corner of Montecito and Chapala streets, just a few blocks from the ocean, on land then owned by the Southern Pacific Transportation Company. The tree was officially designated as a historic landmark in 1970, and the property was deeded to the City of Santa Barbara in 1976. The tree has since been placed on the California Register of Big Trees. The roots are protected by a chain barrier the size of the canopy. The tree may be viewed at the Amtrak Train Station, 209 State Street.

1 oz local kumquat-chili simple syrup
2 tablespoons Storm Late Harvest Sauvignon Blanc reduction
1 1/8 oz lime juice
1/2 oz yellow Chartreuse
1 oz Black sea salt
1 slice 'pinwheel' of fresh kumquat

Drink Description:  “Santa Mezzo del Presidio” - Invoking St. Intermezzo, patron saint of all who feel stuck in the middle, we call upon her to lift our collective Santa Barbara spirit… Cutler's Vodka, fresh local kumquat & lime juices, yellow Chartreuse and chili oil & sea salt garnish.

Recipe Instructions:  Chill all ingredients--save for sea salt, chili oil and kumquat 'pinwheel'-- in a shaker with ice, then serve up, in a martini glass. Use kumquat to moisten rim of martini glass then dip in black sea salt. Garnish with chili oil drizzle and kumquat pinwheel on rim.

Tasting Notes:  Like all creative endeavors, the working thru the process was the most rewarding part. We starting wanting to incorporate kumquat as it is as ubiquitous as it is unknown (even in SB!) and it's citrus quality, while tart, does not create a lot of pithy tannin. We also wanted the chili oil to truly be a hint as many spicy cocktails with habenero, chipotle or ghost pepper can completely overpower both cocktail and palate. A floral element, too, was desired to not overpower but soften both spicy and sweet so we added the Chartreuse. Lastly, we wanted to include a sweet-- but not-too-sweet-- element that was local so we settled on a reduction of Ernst Storm's Late Harvest Sauvignon Blanc... and that was the moment it all came together as a complete drink.

The Backstory:  Collaboratively created by Wine Cask Wine Director David Fainberg, Intermezzo Head Bartender Bruno Pereira and OG Bartender Chris Wright, the Santa Mezzo del Presidio effuses classic citrus overtones, through the use of local Kumquat and lime juices, while contrastingly offering a spike of Santa Barbara spice via a smoothly layered slick of chili oil. Locally-produced Cutler’s Vodka epitomizes our regional appeal, while the incorporation of Chartreuse invokes centuries past monasterial attention to detail. Finished with a rim of sea salt to evoke a breezy laid-back lifestyle, the Santa Mezzo del Presidio is the perfect drink to bring balance to an otherwise chaotic life. Welcome to the American Riviera!”

How does your drink embody the spirit of SB?:  Our collective opinion on tasting the finished product was it is 'smooth and breezy', which we felt was an apt description for the American Riviera lifestyle. We also believe that, save for the Chartreuse, all ingredients-- Cutlers Vodka, kumquat, lime, Storm Late Harvest Sauvignon Blanc reduction-- being local surely supports our locavore esprit.

Drink Description: 
Leadbetter Blues is an approachable, refreshing, well-balanced bourbon cocktail to be enjoyed on any Santa Barbara day or night.

Recipe Instructions:  Muddle 6 S.B.blueberries with 3 mint leaves, add 3/4 oz local fresh lemon juice, 1/2 oz house made walnut simple syrup, 2 oz Cutlers 33, 3 dash cutlers aromatic bitters. Hard shake, double strain over rocks in a low ball. Float 1 1/2 oz Topa Topa IPA. Garnish: Blueberries, mint leaf, lemon twist.

Tasting Notes:  The Leadbetter Blues is a perfectly balanced, bourbon forward cocktail. It has notes of fresh mint, summer citrus, Santa Barbara walnuts, local blueberries picked at perfection, and finished with a kiss of hops.

The Backstory:  The Leadbetter Blues began with a bite of my friends locally grown walnuts. After a little investigative work with the help of the Santa Barbara Independent, i found an article stating that at one time Santa Barbara was the Walnut capital of the U.S.. From there i started to ask my friends if they had any other fruits or ingredients grown on their property. I was later presented with local lemons, fresh mint and blueberries. Berries being the "quintessential" fruits of summer. ( S.B. Independent dated: Wednesday , July 11, 2012). In another article, Lemons were stated as one fruit that flourishes in Santa Barbara. (S.B. Independent dated: Saturday, November 17, 2012.) Of course I chose Mr. Cutlers Premium Bourbon known as Cutlers 33, and his very own aromatic bitters. From there, it was up to me to combine these ingredients to create the winning cocktail for this years competition. I needed to set myself apart from the average joe, so i started playing with other local products such as wine and beer. I was more than happy with the addition of Topa Topa's IPA. It really brought it all together. Now i just needed a name; the Leadbetter Blues was born.

How does your drink embody the spirit of SB?:  The spirit of Santa Barbara are my friends, better known to me as my FAMILY. During the summer we all like to get together and hang out at Leadbetter beach. Because one of my friends is in a band, we like to sing and enjoy many beautiful sunsets. The blues is one of the genres he likes to play. So for me, my cocktail is all about my family and the local ingredients they grow at their homes in S.B.. I wouldnt be where i am today without my friends. Santa Barbara is our home, and for this competition i proudly submit the Leadbetter Blues, everything special to me about Santa Barbara.

Ingredients:  featuring Cutlers Gin, Dolin Blanc Vermouth de Chambrey, Gifford Pamplemousse, Salers Apertif, Australian Aromatic Lemon and Lime bitters, Regans Orange bitters, fresh squeezed lemon juice, and Jarritos grapefruit soda, locally sourced lavender from the Santa Barbara Farmers market.

Drink Description:  A light pink negroni featuring locally distilled Cutlers Gin, pamplemousse and Salers Apertif

Recipe Instructions:  1 1/2 oz. Cutlers Gin
1 oz Dolin Blanc Vermouth de Chambery
1/2 Gifford Pamplemousse
bar spoon of lemon juice, and a large dash of Salers Apertif, 1 dash Regans Orange bitters, one dash of Australian Aromatic lemon and lime bitters, a light float of Jarritos grapefruit soda.

Build cocktail in shaker, strain and serve over a large ice cube. Garnished with a lavender sprig and lemon twist.

Tasting Notes:  June Gloom is a light crisp, citrus forward Negroni contributing to the theme of the array of locally sourced citrus in Cutlers Gin. The sweetness of the Dolin blanc and pamplemousse accentuate a mild pink grapefruit flavor. The nose is bright and floral with a lavender sprig offering the smell of early summers in Santa Barbara. Pairs well with grilled chicken and veggie kabob

The Backstory:  This cocktail has taken many forms, and has evolved throughout the classic curiosity of a new mixologist. Late nights and trial runs to find the perfect balance on a new Negroni with a twist. Benchmark bartenders have been tweaking this classic drink since we opened our doors four years ago and continue to set the bar higher for ourselves each time, while keeping it simple.

How does your drink embody the spirit of SB?:  June Gloom embodies the colorful light of the sunset over the ocean in June. As this cocktail is shaken it creates a light pink fog which reminds us of our pretty little town in the month of June. The citrus brings to life the agriculture Santa Barbara is surrounded by and known for. A bright lavender sprig and a lemon twist are inspired by a summer evening walk through town.

1/4 oz Lemon Juice
1/4 oz Simple Syrup
1 Dash Peychauds Bitters

Stir Ingredients in a mixing glass and strain.

Insert large ice cube.

Top Layer:
1 Blackberry
1/2 oz Cutler 33 bourbon
1/2 oz Storm Cabernet Sauvignon
2 Dashes Pernod Absinthe
1 Dash Angostura Bitters

Shake all ingredients and pour through tea strainer softly on top of the large ice cube.

Tasting Notes:  Sip the whiskey-based cocktail first which flavor gives a fruit forward accent of wine and blackberry, a hint of absinthe, and a bold bourbon finish. After stirring the cocktail, the two layers come together bringing a sensational balance of spirit, botanicals, oak, and citrus.

The Backstory:  A true creation, the combination of gin, bourbon, and wine are a unique blend of a mixed drink. This recipe came together and is reminiscent of two favorite cocktails: The Corpse Reviver #2 and the Sazerac.

How does your drink embody the spirit of SB?:  The cocktail is a two-part layered drink which signifies Santa Barbara’s past and present. The bottom layer embodies our history with lemon (first planted in 1875) and Spanish Vermouth (a drink of choice for the settlers of our town in the 1700’s). The top layer speaks to a younger Santa Barbara with ingredients of wine and bourbon - two more recent successes. The blackberry, native to the west coast, and the hint of absinthe reminds us of the fennel-scented hills of the Santa Ynez Mountains. Finally, the seagrass garnish reflects the Santa Barbara's gorgeous coast. Sipping our Puesta del Sol cocktail is as special as enjoying the view of Santa Barbara's one-of-a-kind sunsets.

Cocktail Name:  Beyond the Boilermaker
Ingredients:  Cutler’s Bourbon, M. Special IPA, local grapefruit, local lime bitters, Aperol

Drink Description:  Beyond the Boilermaker is classic and stylish and not too over-thought, just as is Santa Barbara. Utilizing only local ingredients (with the exception of Aperol because it just screams summer), Beyond the Boilermaker actually is quintessential Santa Barbara – deliciously and unassumingly awesome.

Recipe Instructions:  In a mixing glass, add 6 dashes of local lime bitters, 1.5 oz Cutler’s Bourbon, 0.5 oz Aperol, and 0.5 oz grapefruit juice. Add cracked ice to the mixing glass and stir until chilled. Strain into a cup over ice cubes, and finish with 2.5 oz M. Special IPA. Garnish with a lime wedge.

Tasting Notes:  This is a wonderfully refreshing summer cocktail that evokes feelings of a warm Santa Barbara evening. Its focus is on local ingredients and the light and refreshing flavor profile makes it the perfect Santa Barbara summer cocktail. The bitterness of the grapefruit and lime cut through the bourbon, while the carbonation and body of the IPA give it a full and balanced taste. The aperitif’s notes of rhubarb and orange help maintain its citrus theme, while simultaneously transporting you to your favorite summer getaway. Pair this with your favorite brie and apples or salsa and chips.

The Backstory:  It was debated if this cocktail should be titled "local on local on local" but settled on Beyond the Boilermaker. BTB was created by Les Marchands bartenders focusing solely on local ingredients, personal favorite cocktails, and the Les Marchands classically stirred cocktail program. Simple yet deep in flavor, Beyond the Boilermaker is classic yet new.

How does your drink embody the spirit of SB?:  This cocktail is a Santa Barbara summer punch with local on local on local ingredients. Poolside or beachside, Beyond the Boilermaker, will hit the spot on any one of Santa Barbara's sizzling summer days or nights. Cutler’s Bourbon, M-Special IPA, and locally grown, light and refreshing, grapefruit, lemon and lime citrus (of which Santa Barbara is known) sync up nicely for a perfect cool down refreshment.

.5 aquafaba (for foam )

Drink Description:  The tangerine falls with a cutlers aquafaba foam. Named after the waterfall in Santa Barbara

Recipe Instructions:  In a Tin poor 2.5 oz Saba bourbon whiskey
.5 agave
Add . 5 aquafaba
Add .5 tangerine shrubs
Dry shake for 30 seconds
Poor in rocks glass ad a ice cube and top with cutlers cold brew liqueur
And Finnish garnish with a dehydrated sugar coated tangerine

Tasting Notes:  Creamy salty musky tangerine
With a coffee sweat nose
And a hint of sharpness to cut thru the drink

The Backstory:  Inspiration came from listening to my hiking friends talk about this hike in great detail and getting so jazzed about it
